Make a paste of lemon juice, green chilies, garlic ginger. Then add half of your spice mix to it. After an hour add lemon juice, ginger/garl;ic paste, meat tenderizer, salt and vinegar in the pot and leave the chicken to soak for another hour. To make the sajji masala crush together the cumin seeds, black pepper corns, garlic, cardamom seeds, coriander seeds,black salt, sea salt, dried mango powder and Pomegranate seeds, and store in a tight jar.

  1. Marinate chicken with all above ingredients and leave it for 30 to 40 minutes
  2. Now cook on medium flame till oil come out then add 2 green chilli if you like
  3. Enjoy with roti or naan
