Cook for about 2 minutes until bottom side is slightly toasted. Lightly brush top of panino with oil mixture. Flip and cook for about 2 minutes. Continue to flip until both sides are toasted and cheese is slightly melted.
  8. Remove from pan and let stand for about 2 minutes. Cut in half. Enjoy!

You can also use leftover grilled chicken or even deli chicken breast for this panini. Preheat an oiled grill pan over medium-high heat. Turn the heat down to medium and re-oil the grill pan. Coat a nonstick skillet (large enough to hold the paninis) with olive oil spray and heat over low heat. Add the paninis and press down with a lid or another clean pan.
