Steps to make Chicken masala(Odia style):
- Wash the chicken properly and mix all the ingredients(provided for marination) for marination in a bowl. Leave it for 30min.
- Roast cloves,cinnamon,cardamom,black pepper and coarsely grind it. Keep it aside.
- Heat oil in a pan and add chopped onions to it. Fry it till golden brown.
- Then, add ginger-garlic-onion paste and saute it for 2min till the raw smell of the paste goes away.
- Add bay leaf and saute it. Then add chopped tomatoes and saute it till it mix properly with the masala.
- You can add some water when the mixture becomes dry in the pan making it difficult to saute.
- Saute it for 2min and add turmeric,kashmiri mirch and roasted garam masala powder. Saute it well until you see the masala turns brown in colour and separates itself from oil.
- Add the marinated chicken to the mixture and mix it well. Cover the pan with a lead and let it cook for a few min. Don't forget to check and saute it once in every 3-4 min.
- Add a little water if it's needed. It depends how much gravy you want. I want it to be thick. So, I preferred adding less water.
- Turn off the gas after the chicken is properly cooked and blended well in the masala.
- Serve it hot with hot roti or parantha.
